PANEL DISCUSSIONS/WINE SEMINARS*

• 4:30-5:15 p.m. “Bling or Bargain,” Can you really taste the difference? In this seminar Justin Warner will explore (and rap about) how the price of luxury (or frugality) is related to the making of a wine. Attendees will be put to the test: Can your palate tell if a wine is Bling or Bargain?

• 5:45-6:45 p.m. “Food City: The New Language of L.A.,” moderated by Times Deputy Food Editor Betty Hallock, will feature panelists Roy Choi, a FOOD & WINE “Best New Chef” and chef/owner of the renowned Kogi food truck, Chego in Los Angeles and A-Frame in Culver City; Sang Yoon, chef/owner of Father’s Office in Santa Monica and Culver City and Lukshon in Culver City; Jet Tila, chef/owner of the award-winning Wazuzu at the Encore resort in Las Vegas; and Mario Alberto, executive chef of ChimĂş in Downtown L.A.

• 7:15-8:00 p.m. “Navigating A Wine List”
Way too often sommeliers write a wine program that is similar to watching a foreign film with subtitles. It just becomes difficult to follow, understand and turns people off. There is a way to feed the inner soul of the creative artist while pleasing the crowds. Moderated by Ira Norof, CWE, here are 3 sommeliers wine directors that can give their own interpretation of what works for them. Jesse Rodriguez,CWE (Addison Restaurant and Grand Del Mar), Michael Shearin (Drago Centro & Santa Monica), Jeff Morgenthal (Porta Via and The Bar Room)

• Betty Hallock will guide guests through The Find, the signature Food section column, highlighting Southern California’s wealth of small restaurants.

• 4:30-05:15 p.m. Kajsa Alger
“KAYA TOAST”
Kajsa Alger will demo Kaya Toast, a Singapore hangover recipe that has emerged as signature dish at Susan Feniger’s STREET. This unique STREET experience features toasted bread layered with coconut jam surrounded by dark soy sauce, white pepper and topped with a fried egg. The result is a dish that is so popular, people order it as an appetizer and dessert.

“When I was growing up in Italy on welfare and food stamps, pork and chicken were the go to foods because they were cheap. Today, I still want to remember where I came from. I take these two ingredients to the next level with this Crispy Pork Belly Sandwich with Fried Egg on top.” — Fabio Viviani

Chef Marcel Vigneron will demonstrate “Tako Taco” which is a taco made with pressure-cooked baby octopus, a tequila infused mango and jicama salsa with charred tomatillo.
